After finding success in the UK and Nordic markets, William Grant & Sons has brought Ailsa Bay Single Malt Scotch Whisky onto Australian soil. More than an award-winning spirit, Ailsa Bay is the first and only whisky in the world to be crafted based on a ‘sweetness’ index, developed by Malt Master Brian Kinsman. In other words, this Lowland single malt doesn’t just balance sweetness and smoke, it does so with scientific precision.
In addition to its unique, data-led distillation, Ailsa Bay is the only Scotch whisky to undergo ‘micro-maturation’. Specifically, the spirit is first aged in small bourbon casks for up to nine months. Thanks to this ‘cask starting’ (as opposed to ‘cask finishing’), the whisky undergoes a rapid maturation, taking on complex layers of flavour. Meanwhile, every step of the process–from distillation to maturation–goes down in a state-of-the-art distillery in Girvan, Scotland.
