Archie Rose takes your curiosity for experimental drinks and combines it with a heavy dose of patriotism for ArchieMite Buttered Toast – a savoury, buttery, unaged spirit inspired by Australia’s love for breakfast spreads.
ArchieMite is created using a combination of individually distilled ingredients including freshly churned Pepe Saya Butter, Sonoma sourdough toast and a selection of blended yeast-extract spreads, best known as the basis for the greatest spread of all time – Vegemite. Limited to 3000 bottles, ArchieMite Buttered Toast Spirit is released on May 8 and priced at $79.
“Trying to describe how it tastes is like trying to describe the colour blue,” says Dave Withers, Archie Rose Master Distiller.
“The spirit itself has a big, mitey character at the front followed by biscuity, bready notes. On the palate, you’re given a combination of all three elements coming together – buttery, almost warm, crisp-edged toast with that umami-rich, savoury mite flavour.”
Archie Rose has opted for the full-breakfast experience, combining the savoury spread, toast and thick layer of butter all-in-one. The team specifically asked for day-old or leftover white sourdough bread toasted in the Sonoma oven to not only minimise food waste but because drier, crisper edges would result in a better toast flavour. “You can really sink your teeth into it,” says Dave.
If $79 is too steep for an experimental drink, the Archie Rose Distilling Co. bar will serve ArchieMite Bloody Marys, Espresso Mite-tinis and serve the spirit in place of neat whisky as a Pickleback, followed by a nip of straight-up pickle brine.
