Lark Distilling Co. Captures Plum Pudding in a Glass with Brandy & PX Sherry Cask

The Christmas spirit is alive and well with Australian icon Lark Distilling Co. The whisky producer has kickstarted a new partnership with South Australian winemaker Seppeltsfield and fellow Tasmanian distillery Bothwell with a stunning new release that puts rum-balls to shame. The new Brandy & PX Sherry Cask Release is an expertly crafted dram that captures the subtle festive sweetness of plum pudding in every glass. Tis’ the season, after all.

Collaboration appears to be the name of the game for Lark of late. In October, the Tasmanian producer acquired Pontville Distillery and Estate, encompassing 40 acres of land and buildings including a 130,000-litre distillery, a cellar door, eight bond stores, a working cooperage and the historic stables and homestead. With three working distilleries now under its direction, Lark is looking towards the future, in more ways than one.

According to Lark Distilling Co., the new release is a perfect cross-over of flavours and styles between the three producers. To create the Brandy & PX Sherry Cask Release, Bothwell’s bourbon was combined with sherry and white oak casks, balancing both Seppeltsfield’s PX Sherry and Lark brandy barrels. In turn, this reportedly resulted in a ‘mosaic of a single malt’ that is quaint and comforting.

“The Brandy & PX Sherry Cask Release is an indulgent little dram born in our Bothwell Distillery and seasoned in a selection of PX sherry and brandy casks,” Chris Thomson, head distiller at Lark Distilling Co. said. “This limited-release is a sippable plum pudding with a long, rich finish. The dark and brooding characteristics of blackberries, dried fruit and hint of smoke take Seppeltsfield’s PX Sherry to a whole other level, resulting in something that feels like a big holiday hug in a glass.”

In terms of how the festive new release tastes, it’s a bit of an exploration of holiday spirit. According to Lark’s official tasting notes, the Brandy & PX Sherry Cask Release offers dark forest fruits, bright citrus peel and Tasmanian brandy blanketed in toasted oak on the nose. From there, whisky fans can enjoy a dark and brooding, palate of plum pudding, blackberries and a hit of smoke that ends with a long, rich finish.

Priced at AUD$299.99 for a 500ml bottle or AUD$89.99 for a 100ml bottle, the new Lark Distilling Co. Brandy & PX Sherry Cask release is now available exclusively from the online store.
