Whilst it comes as no surprise to Tasmanian locals that everyone is salivating over Lark’s new signature Rare, for the rest of us mainlanders, strap in and get ready to enjoy one of Australian whisky’s worst kept secrets because Lark doesn’t joke around when it comes to its vintage drop.  This is one Tassie devil not to mess around with.

Firstly, it has been released as a special limited series – in partnership with esteemed SA winery Seppeltsfield (who said wine and whisky don’t match?) –  to celebrate 30 years since Lark’s first distillation. Finished in rare Seppeltsfield Para Liqueur casks from 1992, Para 92 is rich, deep and incredibly complex, in keeping with the label’s storied legacy for excellence. Secondly, most importantly, it’s a very welcomed guest to your palate lads. Its ever-so-subtle hints of berry custard and scorched nuts blended with new leather and pipe tobacco ensure it’s easy on the eye, mouth, tongue, nose – you name it.

As you can imagine, anything this enchanting, and complex, comes in short supply (how could it not?) and so the Para 92 is a rarity for good cause and reason.  With only 3,000 bottles available to consumers, this is a chapter in the Lark fairy-tale story not to miss out on. And the head scriptwriter himself – Bill Lark – concurs.

“The release of this special single malt is a celebration of Lark Distilling and the partnership with Seppeltsfield,” Lark said. “This is a release we want to be celebrated and enjoyed with a limited number of bottles released from today. The PARA Tawny casks were complex and offered a depth and character that have made this release so special. The result is long and sticky oak sweetness, perfect for those wanting to enjoy as we roll into Autumn.”
