Sydney\u2019s Stockade Brew Co. has officially opened the doors to a brewery, bar and tasting room located in the heart of Marrickville. The new venue celebrates what Stockade drinkers love most and aims to cater to locals looking to unwind with a wine or cocktail.\r\n\r\nStockade Brew Co offers the core line-up of five \u2018sessionable\u2019 beers alongside a number of limited brews. The core range possibly includes 8bit IPA, Hop Splicer XPA, Chop Shop Pale Ale, Duel Hoppy Lager and The Sesh Golden Ale. FYI, 8bit made it into the GABS Hottest 100 Beers of 2017.\r\n\r\nCurrently, the limited brew range includes The Mountie, a maple syrup-infused imperial stout, and Old Money is featured on tap for launch. Stockade Brew Co also serves a number of revolving guest taps including Randall\u2019s, Bucket Boys and 3 Ravens Brewing.\r\n\r\n\r\n\r\nFor the cocktail list, the team took inspiration from the hops that surround them, drawing on the unique flavour characteristics of citrus, floral, pine, flowery aroma, and of course, bitterness. The result is a rotating list of six seasonal cocktails using raw spirits infused, aged and finished on-site. Wine connoisseurs will appreciate the selection of barrel-aged wines, blended on-site with Urban Winery Projects.\r\n\r\nOn the food front, Stockade Brew Co has created a menu based on collaborations that change monthly. For the opening, It\u2019s with Bankstown\u2019s Baby Rey\u2019s, who\u2019s best known for the Wild West Burger. All Baby Rey\u2019s dishes served on premise come with a Stockade twist. The maple bacon jam now features Stockade\u2019s Mountie stout, while the chilli and cheese-loaded fries are served with a generous dollop of Chop Shop Ale dressing. Following Baby Rey\u2019s tenure, pan-Asian BBQ truck Tsuru will take over in August, before Grease\u2019n\u2019Grind burgers in September and La Raza Mexican Cantina in October.\r\n\r\n\r\n\r\nThe brew-bar itself takes design cues from its industrial surroundings, transforming the old factory space with terracotta tiles and furniture made from blackbutt wood. Large steel screens and customised lightbox menus play to the building\u2019s industrial history.
