Sydney coastal dining just got a whole lot better thanks to the opening of Coogee Pavilion’s highly anticipated middle floor. As of today, Friday 17th of January, Sydneysiders can embrace Merivale’s latest, and perhaps most ambitious project to date that consists of three new venues, each distinct in its own right. Restaurant mimi’s, cocktail bar will’s and tapas bar Una Más can now proudly call the Coogee Pavilion home.
mimi’s is set closest to the beach with big windows overlooking the waves with the intention of celebrating the beautiful Sydney coastline. Jordan Toft, executive chef (you may know him from Bert’s and Bar Topa) opted for Mediterranean style cuisine with a uniquely Australian twist. Simplicity and elegance meet for a divine designed-to-share menu boasting a selection of seafood, meat and veggies cooked to perfection. Think warmed Queensland scallop, barbequed blacklip abalone skewer, pancetta, bay and yeasted puff pastry arlettes, iced raw summer vegetables, roasted spanner crab and grilled wagyu flatiron to name just a few. Restaurant patrons can also look forward to an extensive wine list featuring over 600 bottles from the mimi’s cellar.
will’s, the cocktail bar, is designed to help you escape from reality with not only the decor but also the energy that fills the space and the distinctly European drinks list aiming to bring together the Italian coastline with a touch of local inspiration. Some cocktail examples include ‘The High Tide’ (yellow peach, limoncello, rinomato, Beefeater, and prosecco), the ‘L’Americano’ (plum shrub, Select aperitivo, Campari, mandarino and soda) and the signature ‘Willy’s Martini’ that’s served dry, wet or dirty.
Lastly, Una Más, the wine tapas bar is the last of the three venues that round out the Coogee Pav middle level. With a clear Mediterranean feel, and menu influences from both Spain and Australia, it makes Una Más the perfect setting where you can grab a quick bit to eat or linger around for hours.
