The new lockdown meal kit is the brainchild of Nicholas Hill, Porcine head chef and restaurant extraordinaire. Bringing a taste of the American mid-west Down Under, Hill has carved and smoked three whole Berkshire pigs for the new partnership, focusing on the most premium cuts, but there’s more than just meat on the menu.
Hill took the iconic Buffalo Trace Bourbon Whiskey as a starting point and crafted a stunningly curated assortment of courses. Known to pair well with smoked meats and caramelised desserts, the Porcine chef used different techniques to integrate the bourbon’s rich flavours into each and every element in the box, from the savoury starters to the rich and sweet desserts. Fans who dive into the new lockdown box will note the toffee, vanilla and molasses flavours on the palate, finishing with the classic hint of brown sugar and spice for which the bourbon is known.
