Mirazur, a three-Michelin-star restaurant in Menton, France, will be bringing its renowned culinary philosophy and spirit to the waterside location in Sydney under the direction of chef-owner Mauro Colagreco and a sizeable portion of his staff from the establishment. The team will work with producers who have a strong love and respect for the sea and land, and the menu will aim to highlight the best of Australia’s produce.

“Mirazur Beyond Borders is the opportunity for us to enrich our knowledge, philosophy and commitment. I have visited Australia a few times and what excites me is that it is a country where there is a huge diversity of nature, landscapes, and species,” says Colagreco.

“It’s very important for me and my team to learn from and experiment with the ingredients we find in the country we visit, and to learn from all the people and products we encounter on the way. Although we are coming to Australia for a few weeks, I already know we will leave with something that lasts forever.”
