Lumière on Thirty Five renders an instant impression by way of its tastefully atmospheric lighting and decor, paired with those mind-blowing views; peer through the windows to behold Sydney’s expansive skyline from the other side of Darling Harbour before checking out the menu and its bounty of indulgences. Again, we can think of no better place to close out the night after grabbing dinner nearby or catching a performance at one of the area’s acclaimed theatres.

The menu thereby features time-tested creations and new concepts alike, each boasting its own backstory whilst delivering a unique visual profile and exquisite taste. Here’s a quick look at a few of our favourite cocktails from Lumière on Thirty Five’s signature list:

  • The Lighthouse: Two doctors joined forces to create Two Doctors Whiskey, the barrel-aged liquid that makes up the base of this spirit-forward cocktail. Barrel aged over six months, it offers a drinking experience that showcases the interaction between spirits, their ingredients, the ageing process, and pure craftsmanship. Expertly created with Three months barrel aged, Two Doctors Whiskey, Averna Amaro, Pedro Ximenez, Whiskey Bitters, Chocolate Bitters.
  • The Aviary: This tasty cocktail takes inspiration from the flight of birds, imparting a sense of freedom with every sip. Much like an eagle on the wing, it inspires with a sense of elegance, grace, and escapism. Beautifully made with Packham Pear infused vodka, St-Germain Elderflower, Honey, Vanilla Extract, Aquafaba.
  • Lumière Brothers: The famous French brothers Louis and Auguste who helped invent modern cinema (and likewise inspired the bar’s name) are honoured with this cocktail and its “autochrome lumière” garnish, named for the process that brought colour to photography. Deliciously crafted from Mr. Black Cold Brew, Bitter Orange, Yellow Chartreuse, L’Aperitif Cream.
  • Purple Rain: One for fans of a certain dearly departed musical genius. Purple symbolises new beginnings and rain washes the past away. This cocktail will renew your spirit accordingly. Crafted with Butterfly Pea Flower infused Grapefruitcello, Campari, Italicus, Fever-Tree Elderflower Tonic Water.
  • Mistakenly Discarded: This cocktail boasts a flavour reminiscent of French toast and is crafted in honour of King Henry IV, who reportedly helped turn that poor man’s dish into a delicacy enjoyed by aristocracies around the world. Purposely made with Clarified Cinnamon Brioche infused Buffalo Trace, Licor 43, Lemon, Full Cream Milk.
