Australia’s ‘Most Instagrammable’ Desert Opens New Sydney Store


Gram Pancakes is a cult classic Japanese café famous for its indulgent soufflé-style, sky-high pancakes. Since opening its first Chatswood store in 2020, the café has found a myriad of success with queues of customers lining up in excitement to taste – as well as Instagram – Grams increasingly popular sweet and savoury delights.

These puffy pancakes have gained a cult following across the streets of Sydney. And the launch of The Galeries shop marks the first of four new cafe openings, anticipated to launch throughout Sydney within the next two years. What better way to enjoy a Saturday with restrictions easing than to do a spot of shopping at The Galeries – featuring shops such as INCU, Carharrt and MUJI – before dropping in for a spot of indulgent sky-high pancakes.

Like its Chatswood counterpart, the new store is designed by Adesigneory Studio and features more of its iconic luxurious green, grey and gold colour palette. Modern wooden chairs, hanging plants and neon lights give customers a true Japanese style experience. To combat the queues found at the Chatswood store there’s an expansive banquette style dining area designed to hold up to 80 patrons – the one-hour dining limit remains firmly in place.

“Our new cafe will give us the opportunity to serve more of our signature light and fluffy premium pancakes and takeaway boxes – Premium To Go – on a larger scale, as well as introduce them to CBD workers and shoppers who might not have had a chance to try them before!” said Scarlett Zhao, Australian Chief Executive Officer.

“The Australian market responded so well to our initial launch in Chatswood Interchange, to the point where we’re now selling, on average, 5000 pancakes each day,” she added.

All the classics remain from the Chatswood store, the cult-classic premium souffle pancakes, Mochi Pancakes, French Toast, and a new savoury Eggs Benedict style option. Most excitingly there’s a new signature dish exclusive to The Galeries. ‘The Galeries Premium Pancake’, has been specially created for shoppers who have the luxury of time to sit down and slowly enjoy every bite. The decadent dish includes a stack of three ultra-light pancakes, each with a soufflé consistency filled with Nutella cream, fresh slices of banana and toasted hazelnuts. We know which one we’ll be trying first.
