Sullivans Cove Distillery has announced its first special edition Double Cask single malt whisky made with a combination of individually selected French oak ex-tawny and American oak ex-bourbon barrels. Double Cask DC095 is bottled at 49.6% ABV and unfiltered, so you can experience Sullivans Cove in its raw form.\r\n\r\n\u201cWe\u2019ve wanted to do this for a really long time,\u201d says Sullivans Cove Head Distiller Patrick Maguire. \u201cThe higher alcohol percentage holds the body of the spirit perfectly and packs a flavour punch.\u201d\r\n\r\nThis special edition Double Cask DC095 can include small particles in the whisky, otherwise known as \u201cflock\u201d. It\u2019s natural for unfiltered whisky to have flock, representing an amazing array of flavours and textures that contribute to the whisky\u2019s character and mouthfeel.\r\n\r\n\r\n\r\n\u201cThis DC095 release will be just as you would expect from our usual Double Cask with the added advantage of bolder flavours and a creamier mouthfeel,\u201d adds Distiller Heather Swart.\r\n\r\nSullivans Cove Distillery impressively holds the oldest stocks of any Australian whisky distillery, with Double Cask often containing whisky as old as seventeen years. Double Cask won multiple international awards, including Best Australian single malt 13-20 years at the World Whiskies Awards earlier this year. The special edition Double Cask DC095 could do the same in 2018.\r\n\r\nThere are only 957 bottles of this special edition Double Cask. Members of the Sullivans Cove mailing list will have exclusive access to purchase this whisky before everyone else.
