- LARK Christmas Cask No.125 returns for its eighth festive season, with a larger 700mL bottle replacing the previous 500mL.
- The limited-edition Tasmanian single malt offers 200mL more whisky for the same AUD $250 price, with a 43% ABV.
- Made in collaboration with Frogmore Creek and Hobart patisserie Jean-Pascal, the whisky is finished in red wine barrels seasoned with fruit mince pie jus.
Christmas has come early for Australian whisky lovers, with LARK Distilling Co. bringing back its annual Christmas Cask single malt. And for 2026, the Tassie distillery has decided to be a little more generous with its pours.
The eighth annual release, Christmas Cask No.125, arrives in a new 700mL bottle, up from the previous 500mL. That’s an extra 200mL, or 40 per cent more whisky, without adding a cent to the AUD $250 price tag. Not a bad Christmas present, especially when premium whisky rarely gets cheaper by the millilitre.
Of course, the bigger bottle isn’t the only reason this limited-edition whisky is worth a dram. Once again, LARK has teamed up with Tasmanian winery Frogmore Creek and Hobart patisserie Jean-Pascal to create a single malt finished in red wine barrels seasoned with fruit mince pie jus. I might not be partial to the mince pies during lunch on Christmas Day, but even my taste buds are wondering just how much they have a part to play in this one.
1/2What’s Inside LARK Christmas Cask No.125?
The unusual collaboration dates back to 2019, when surplus fruit mince pie jus from Jean-Pascal was used to season Frogmore Creek’s red wine barrels. Rather than letting those ingredients go to waste, the barrels found a second life finishing LARK’s single malt whisky.
For No.125, the whisky is first matured in Port and Sherry casks before receiving its final treatment in barrels seasoned with fruit mince pie jus. It’s certainly an unconventional approach to making whisky. But given the bountiful flavours certain ingredients can evoke, from Christmas pudding to spice and caramel, it’s no wonder this Christmas Cask tradition has reached its eighth annual release.
1/2Official Flavour Profile
“A limited edition Christmas Cask Single Malt aged in Port and Sherry casks, finished in barrels seasoned with Fruit Mince Pie jus, revealing layers of spiced apple, caramel and culminating in a long indulgent festive finish.”
LARK says the 43% ABV whisky opens with aromas of plum pudding, brandy butter, mulled-wine spice, and gingerbread. On the palate, expect coconut shortbread, baked custard, spiced apple and caramel, followed by a finish of candied walnut and orange cream. Quite the Christmas menu, even before you’ve sat down for lunch. Best save room.
1/2How Much Is a Christmas Bottle of No.125?
LARK Christmas Cask No.125 will set you back AUD $250 for the new 700mL bottle, the same price it was last year when it came in the smaller 500mL bottle.
The whisky also comes in a new blue-and-gold presentation box, illustrated with LARK’s historic Pontville stables beneath a starry Tasmanian sky. Look closely, and you’ll find founders Bill and Lyn Lark sharing a toast, while Master Distiller Chris Thomson is there inspecting a cask.
LARK has announced early access from 8 am AEDT on Wednesday, 21 October 2026, through its Christmas Cask No.125 website. If you live nearby, even better: the distillery will sell No.125 at its Hobart venues and select retailers. If you’re travelling overseas, keep an eye out for it at participating airport duty-free and other travel retail outlets, too.
With an extra 200mL in the bottle and not a dollar more to pay, this year’s Christmas shopping list has at least one thing that gives us a little more for our money.
