Introducing Wakefields Wine Bar

Ainslie institution Edgar’s has opened a charming new wine bar, Wakefield’s Bar & Wine Room,
marking the latest expansion for the much loved Canberra local. Wakefield’s Bar & Wine Room will provide an intimate, warm-lit space for the Ainslie neighbourhood area, with a focus on Australian wines, local produce and suppliers, and live entertainment from across Canberra.

“With international travel off the cards for the foreseeable future, we are also looking at Edgar’s to provide an experience worthy of a trip to Canberra and we would love to encourage visitors to stay longer and explore the capital” added owner Frank Condi.

Pouring a diverse range of over 100 Australian wines, Wakefield’s will showcase many local Canberra winemakers from across the region including Mada, Helm and Eden Road, along with stocking a variety of Aussie craft beers.

Head chef Steven Jacomos (ex- Fitzroy Town Hall Hotel Melbourne, Saint Crispin/Lupo and Qualia Resort), has created a succinct menu that champions Australia’s best seasonal produce. Think chargrilled lamb riblets, crumpets with smoked trout and bottarga, hand-rolled pasta, and finished off with apple tarte tatin for dessert.

Merivale Opening Intimate Paddock-to-Plate Bistro

Merivale has announced that Elsa Marie and Julian May of Chez Dominique will take up a residency at The Whale Inn in Narooma later this month. An intimate paddock-to-plate bistro pop-up is in order as Chez Dominique at The Whale draws on humble French roots with creative seasonal cooking that celebrates local South Coast produce.

The French-Australian chef couple has built close relationships with local farmers, producers and artisans with whom they will create authentic, fuss-free dishes that let the ingredients speak for themselves. Vegetables will be the stars of the show, all picked from four local farms that the pair cherish along with growing and harvesting a variety of vegetables and herbs on site.

Vegetables will be accompanied by fresh, locally-caught whole fish and oysters from Narooma, grass-fed pork and beef raised and butchered by Ian and Rhys Martin of free-range Martin’s Ridge Farm, and duck from the regenerative farm, Tathra Place, in Taralga. Dairy is provided by Tilba and Bodalla farms, fresh eggs will come from the chefs’ chickens, Thelma and Louise, as well as Bega Valley free-range eggs. Sourdough will be baked daily in-house using all organic flours, grains, pulses and sugars. Fresh, fresh, fresh that’s all we have to say.
