Collingwood Distillery The Craft & Co’s Solera Aged Whisky Arrives 7 Years in the Making


Just when you thought they were calling “last drinks” on summer, along comes a lit new whisky release to ensure the party continues for a while yet. The crafty crew at Collingwood’s The Craft & Co has unveiled an all-new, all-time, cask-strength Solera Aged Whisky. Seven years in the making, this landmark Solera release arrives in seriously short supply. In fact, this batch is limited to just 500 bottles, so it really is going to be a case (or cask) of first-in, best-dressed.

“Our distilling team have toiled over this batch since we first opened our doors in Collingwood all those years ago, to now release this spectacular cask-strength Solera Aged Whisky for everyone,” The Craft & Co founder and lead distiller Paul Baggio said. “This is your chance to secure a bottle of an extraordinary limited release and enjoy what is set to become a new benchmark in the local craft spirits scene. There are only 500 bottles up for grabs, so we invite you to take part on this special event and grab yourself a bottle of local artisanal distilling history.”

According to Baggio, the small batch selection provides a whisky that is complex in aromatics of pecan, ripe banana and heavily toasted coffee rinds. Rich and clean golden amber to the eye, the palate similarly delivers hints of stewed quince, burnt orange and dried raisins, all balanced by a long supple finish of toffee and toasted mocha. How’s that for an endless summer party in your mouth?

Adopting the craftsmanship employed through the process of Solera, the subtle range of dark and light malted grains are double pot distilled, then matured in selected small charred Oloroso sherry casks and a range of specialty cherry and acacia vats. That might make sense to the whiskey aficionados among us, but for the rest of us mere mortals, all you need to know is it tastes bloody good.
