For the first time in four years, Sullivans Cove’s fabled ‘Old & Rare’ French Oak ex-Tawny has returned to the award-winning lineup. The iconic Tasmanian whisky distillery has confirmed that the 17-Year-Old Cask Nº TD0187 will be made available to purchase via a ballot system, with entries closing on Wednesday, 29 January. It marks the label’s third French Oak ex-Tawny to be released via ballot since 2021 and the first to be announced since Sullivans Cove officially opened the doors to its upgraded Cambridge distillery.
The latest extension in Sullivans Cove‘s much-loved ex-tawny range, the 17-Year-Old ‘Old & Rare’ French Oak Single Cask TD0187, was filled in June 2007. After maturing in the warehouse for a whopping 17 years and three months, the liquid was decanted in September 2024 under the watchful eye of distillery manager Heather Tillott. According to the industry legend, cask TD0187’s extensive maturation was integral to the spirit’s remarkably balanced character and rich golden hue.

“Refined yet seriously approachable, this whisky embodies balance,” Tillott said. “A lighter tawny profile is perfectly matched with gentle oak, offering layers of sweetness, spice, and savoury intrigue. With its seamless integration and nuanced complexity, it’s an absolute pleasure to enjoy.”
For Sullivans Cove fans, the Old & Rare French Oak single casks represent the pinnacle of the Cambridge’ distillery’s house style. Matured for a minimum of sixteen years in French oak casks previously used to age Australian Tawny Port-style fortified wine, each release is characterised by its depth of flavour and subtle refinement, which Tillot confirmed can only come with age.

For Single Cask TD0187, the rich complexity and juicy dark fruit notes that have long been a hallmark of the Cambridge label again ring true. The Australian whisky boasts hints of chocolate, spice, nuts and earthy herbal nuances, demonstrating a subtle sweetness that is underpinned by an incredible length of palate.
According to Sullivans Cove, this 300L French oak cask yielded only 443 expressions, with each bottled at 47% ABV. Those lucky to snag one will receive the 17-Year-Old Cask Nº TD0187 in a unique, handmade, solid oak presentation box, complete with a letter of authenticity signed by Tillott. French Oak ex-Tawny Single Cask priced at AUD$1,250 is available to purchase via a ballot entry that closes on Wednesday, 29 January.
