The Australian Summer is fast approaching and just the slightest bit of sunshine has got us all excited. Now, thanks to Sydney's InterContinental Double Bay and Champagne House Perrier-Jou\u00ebt, that exhilaration is growing at a speed rate. The InterContinental has given their idyllic rooftop a glorious\u00a0make-over centred around the Maison Perrier-Jou\u00ebt's tradition of crafting nature into art.\r\n\r\nThe signature Perrier-Jou\u00ebt anemone flower motif has been incorporated all throughout the rooftop in all different forms, including eye-catching Summer ready cushion and lounger prints. Not only is it the picture perfect spot with magnificent Sydney harbour views, it's also the ideal rooftop to enjoy a Sydney sunset, and let's be honest, Sydney sunsets sure do know how to show off.\r\n\r\n\r\n\r\nNaturally, the rooftop revamp also came with a menu refresh lead by Executive Chef Alex Vilches.\u00a0\u2018Our new menu highlights delicious fresh produce such as Sydney Rock Oysters, salmon sashimi and grilled prawns. These summer poolside bites are complimented by our refreshing beverage offering, keeping the flavours light, fresh and delicious\u2019 says Chef Vilches. The share-style tapas menu will compliment your poolside hangs as much as it will the mouth-watering\u00a0cocktails mixed with Perrier-Jou\u00ebt.\r\n\r\nDuring September, the rooftop bar is open to the public and in-house guests from Friday \u2013 Sunday, 11 am until 1 hour after sunset.
