Simon Rogan’s three Michelin Star restaurant L’Enclume, which was recently ranked as the number one restaurant in the world by the French restaurant bible, La Liste, is returning to Sydney’s Bathers’ Pavilion for a six-week residency from 16 July until 24 August 2025. This is the second time Rogan has brought L’Enclume from its home in Cartmel in The Lake District of Cumbria, Northern England, to Balmoral Beach’s iconic Bathers’ Pavilion.

The event was a sell-out success when the team arrived for a five-week residency two years ago, and despite tickets to the 8-course event costing $420 per person, it was the hottest restaurant ticket in town with a waitlist of over 2,000 tables at the final service. Now, L’Enclume is returning with a $590 per person, 14-course menu that will undoubtedly sell out again in record time.

UPDATE 10/04/2025: The 14-course menu for the L’Enclume Sydney residency at Bathers’ Pavilion has today been revealed with a flavourful menu of precise and complex dishes centred around the ‘perfect ingredient,’ something that is true to Rogan’s philosophy that only through first growing the perfect vegetable, herb or fruit can a perfect dish can result. Bathers’ Pavilion is a long way from the cobbled streets of Cartmel, but internationally renowned British chef, restaurateur and farm-to-table pioneer, Simon Rogan, will be showcasing his skills at one of Sydney’s most tranquil, stunning beach locations in Sydney once again.

“Bathers’ Pavilion is the only place outside of Cartmel that has served a L’Enclume menu, and remains the only place,” said Simon Rogan. “This is because of the depth of trust and collaboration we have in our relationship with Jess, Tom and their exceptional team.”

“The 2023 residency was about taking what we do in Cartmel and The Lake District and bringing it to Sydney, reproducing it and supplementing ingredients with Australian produce. Now that we’ve spent time in Sydney the approach is different and our local knowledge expanded. We want to take our L’Enclume expertise and create something entirely new – put it this way, if we had started L’Enclume in Sydney, this is what I would have created,” he continued.

With a backdrop of one of Sydney’s best beaches, indulge in a new 14-course menu ($590 per person) with snacks and petit fours, along with a tailored wine pairing ($230, $350, $590 and $1,200 per person).

You can expect a menu that reflects the L’Enclume ethos that champions seasonal and produce-led cooking using local Australian and seasonal produce. However, Bathers’ Pavilion Managing Director, Jess Shirvington is keeping the final 10 courses a secret as that’s all part of the surprise. “Part of the joy of the L’Enclume experience is the element of surprise, inimitable service and moments of pure delight that touch the diner from the moment they are greeted at the door, to the last bite taken of that final dish. We are proud to be custodians of that experience as we enter the fifth year of our partnership with Simon and his formidable L’Enclume team,” she said.

Here’s a list of everything that we know is being served at the L’Enclume Residency at Bathers’ Pavilion 2025 edition:

  • Raw South Gippsland aged sirloin of beef in coal oil with whipped Sydney rock oysters and nasturtiums
  • Kangaroo Valley Jerusalem artichokes, pickled muntries and Yarrawa cheese, winter shoots and vegetables
  • Donnybrook Marron with wax flower jelly, smoked roe, and buttermilk sauce
  • ‘Frozen Pecora sheep’s yoghurt with aerated Willyama yuzu, toasted bunya nut, and preserved essences

“During my time in Sydney, I fell in love with Australian produce, it’s honestly some of the very best in the world. It is a privilege to showcase some of those standout products like marron, snow crab and the best beef in the world along with unique ingredients such as quandong and wattle. We now have great relationships with many of the producers and growers and they are fully committed to working with us on specifically grown ingredients to ensure a truly traceable menu.”
